Joyce's Notes: Unlike most so-called wine crackers,
these are not sweet, and they are flat.

Wine Crackers
Yield: 24 crackers |
| Ingredients: |

1 |
cup |
Flour |
| 2 |
tsp. |
Snipped fresh tarragon |
|
1/4 |
tsp. |
Paprika |
|
1/2 |
tsp. |
Salt |
|
1/4 |
tsp. |
Pepper |
|
3 |
Tbsp. |
Nissley Vignoles, semi-sweet white wine
|

Tbsp. |
Olive Oil |

Directions: |

Preheat oven to 325 degrees. |

In medium bowl, combine dry
ingredients. |

|
In another bowl, combine wine
and oil. |
| |
|
Gradually add liquid to flour
mixture, tossing with a fork until well combined. |

|
Shape dough into a ball.
Avoid adding more liquid. |

|
Transfer dough to a lightly
floured surface. |
| |
|
Roll into a 12" x 9"
rectangle 1/8"-1/16" thick. |

Prick pastry. |
| |
|
Cut into rectangles |
| |
|
Transfer to ungreased baking
sheet. |

|
Sprinkle with salt |
| |
|
Bake 18 minutes or until just
firm and lightly browned. |

Cool on wire racks. |
